I'm sitting here full on hipster with my pour over chemex coffee, in a coffee shop, blogging away, and contemplating life so this might get a little "deep"...just kidding... but really.

I feel like it's easy to fall into a rut in the fall/winter time. I mean sure you can have a day or two that is just perfect, we had one Friday for example, it was absolutely perfection. We sat on the porch with our computers at work, laughed, caused a ruckus, and yet I was more focused than I've been in a while. I'm going to soak those kind of days up while I can because I know those days start getting farther and farther apart, and the gloominess will start creeping in more and more. Especially up here in the great (mid) North East where it can get chilly and gloomy for days at a time, your football team loses to an unranked team, it gets dark at like 3:30 pm, and you start realizing why bears hibernate and how it really is a brilliant idea. With days like that, you can see how it's easy to get stuck in a dull routine. The thing about being stuck in a rut is that you're really the only person that can get yourself out. You have to actively pull yourself out of that dull behavior, or in this case, know it's coming and don't let it happen to begin with! 

Sometimes you just need to spice up your life a little, try something new, experience a new experience, dance in your kitchen to t-swift...alone, and get out of your rut. I'm sitting here thinking maybe I should take some of my own advice, I mean we all know I'm dancing to t-swift in my kitchen on a daily basis, but I really need to get out there and try something new. I think that's going to be my October goal... try something a little out of my comfort zone. Are you in? I'm open to ideas! I'm definitely due for some adventuring, but until then, I'll add some cinnamon and spice to my bread and butter and I'll just live vicariously through others (thank you Amy Knobloch for your stories and non-boring life).

Cinnamon Walnut Bread

Step-By-Step

put everything but the water in a bowl...

whisk it together then add the water...

bring it all together...

cover and let sit for 8 hours... or overnight...

it should almost double in size...

flour your hands and then bring the dough together and form a ball...

bake it up in a preheated dutch oven...

let cool and then enjoy with some butter and honey! 

 

CINNAMON WALNUT BREAD

 

INGREDIENTS

3 cups flour

1/2 teaspoon salt

1/2 teaspoon yeast

1/4 cup brown sugar

1/2 tablespoon cinnamon

1 teaspoon nutmeg

1/2 teaspoon cloves

2 handfuls walnuts

11/2 cup water

INSTRUCTIONS

combine everything but the water - whisk well

add the water and bring together until just combined

cover and let rise for 8 to 12 hours or overnight

preheat the oven to 450

place empty dutch oven in preheated oven and let the dutch oven preheat for 30 minutes

carefully place parchment in the bottom of the preheated dutch - it's going to be super hot... be careful

drop the dough in the center of the dutch oven, cover and cook for 25 minutes

turn the oven off, take the lid off the dutch oven and cook the bread for an additional 10 minutes - DON'T OPEN THE DOOR to take a peak!

remove fresh baked bread from the dutch and enjoy

store bread in a ziploc once cooled
